Cajeta Caramel Sauce
Cajeta is a traditional Mexican treat made by caramelizing goat's milk. It's creation is credited to the town of Celaya, Guanajuato, the state where the Mexican War of Independence started in 1810. Father Manuel Hidalgo was named Captain General of the Americas in Celaya, making Cajeta an important food compliment to the troops. Many variations exist, but ours is a very basic, yet delicious version of the original.
